Healthy Oatmeal Raisin Cookies

Oatmeal Raisin Breakfast CookieI spend many a nights on pinterest searching for healthy protein snacks. When I came across these healthy little cookies, they looked like the perfect snack item to enjoy on my Transformation Challenge.

Oatmeal Raisin Cookies :
3 Ripe Mashed Bananas
1/2 Cup All Natural/Unsweetened Applesauce (small single serve size)
2.5 Cups Uncooked 5 Grain Oats
1/4 Cup Egg Whites
1/2 Cup Raisins
1 tsp Vanilla
1 tsp Cinnamon
1 Tbsp Local Honey

Preheat oven to 350 degrees. First mix all wet ingredients in a bowl then add dry ingredients. Let the mixture stand for 10 minutes while the oats hydrated and soak up the liquid. Drop by spoonfulls onto a parchment lined cookie sheet. Form into round cookie shapes. Bake for 15-20 minutes. Let cool before removing — Makes 12 cookies
