Bok Choy Thai Green Smoothie

Only 1 day left for the 30 Day Green Smoothie Challenge !  I wasn’t too impressed with today’s smoothie.  It wasnt bad, but nothing “special”  I did have to make some modifications so perhaps that was the difference.  I used “spring mix” in place of broccoli sprouts and only used 1/2 of an apple to avoid the babyfood texture.   And it probably goes without saying, but I also omitted the seeds and ginger, and used Coconut Almond Milk in place of water.  I did use some dried unsweetened coconut, but it really didnt lend any flavor in my opinion to the green smoothie.  It was nice and thick but that I think comes from the frozen banana and milk.

Bok Choy Thai Green Smoothie

1 Frozen Banana
1 Leaf of Bok choy or 2 handfuls of Kale (Or other greens)
Small handful of Broccoli Sprouts
1 Apple, Cored
1 inch piece of ginger
1 tbsp. Dried Coconut
1 tbsp. Chia or Hemp Seeds
1 tsp. Spirulina*optional
1 Cup Coconut Water or Water

Instructions: Wash all your produce. Chop and put into blender with a small amount of liquid to start. Add more as needed until you reach your desired consistency.
