As always, I am searching for healthy alternatives that I can feed my growing boys for school snacks or after soccer practice. Oh and it doesn’t hurt if I can eat them for a post gym workout snack either :)! I came across these cookies today and just knew that I had to make them!
These little treats are soft, chewy and good for you too — Is that possible?! As with most of my sweet treats, I add Essante ORGANICS 7.365pH Vanilla protein powder to increase the health benefits.

Essante Protein Peanut Butter Cookies:
1 Cup Nut Butter*
3/4 Cup Agave Nectar
1 1/2 tsp Vanilla Extract
1/4 cup Almond Milk (soy or regular)
1 Tb Coconut Oil (optional)
3 Scoops Essante ORGANICS Vanilla Protein Powder
1 1/2 Cups Uncooked 5 Grain Oats Flour (use a blender to create flour)
1 tsp Baking Soda
1/4 tsp Salt
*I prefer to use the machines in the bulk section and make my own peanut butter — However, if you have the peanut butter with oil on top, you can omit the Coconut Oil from the recipe.
Preheat oven to 325F degrees. Use a non stick pan, line a cookie sheet with parchment paper or use a non-stick mat.
In a medium bowl, combine Essante ORGANICS protein powder, oat flour, baking soda and salt, then set aside. In a large bowl, mix nut butter, agave, vanilla, almond milk and coconut oil by hand until well blended. Pour the mixture of dry ingredients over the top of the wet and mix until just blended. Do not over mix. If dough is too soft to form into balls, chill for 10-15 minutes.
Roll dough into small balls and place on to a cookie sheet. Using the back of a fork, gently flatten each round ball. If fork becomes sticky, dip in cold water before flattening. Bake for 10-12 minutes until light golden brown. Remove from oven and let cool for 10 minutes before removing from sheet.
Makes about 30 cookies.

I am always looking for healthy snacks and treats for my family and these little bars do just the trick! I first began making them, back when I promoted the Body by Vi Challenge. They were quick and easy, plus my boys LOVED them! Now that we are removing soy, whey and artificial sweeteners from our diets, I create these bars using the Essante ORGANICS 7.365pH Vanilla Shake Mix. And boy are they YUMMY to the Tummy!
Essante Protein Peanut Butter Bars:
1.5 Cups Nut Butter*
1/4 Cup Organic or Local Honey
3 Scoops Essante ORGANICS 7.365pH Vanilla (or Chocolate Shake if you want Chocolate PB Bars!)
3/4 Cup Uncooked 5 Grain Oats
1/4 Cup Steel Cut Oats

Mix Peanut Butter and Honey in microwaveable safe bowl and soften in microwave for 45 seconds or so, just long enough to be able to thoroughly mix. Add Essante ORGANICS Protein Shake Mix and remaining oats, one item at a time until mixed. Press on to a cookie sheet and form into a rectangle about 1/2″ thick. If needed, cover with wax paper and use rolling-pin to make smooth and even. Refrigerate 1 hr or until firm. Cut into 20 bars and refrigerate until ready to eat.
Feel free to modify these bars. You can easily add chopped nuts, coconut or dried fruit. Just reduce the oats and add your mix in’s!
